Honey Lime Chicken Enchiladas

A quick, flavorful enchilada recipe made easier with canned chicken and pantry staples!

Ingredients

  • 2 cans (12.5 oz. each) canned chicken, drained
  • 8 flour or corn tortillas
  • 1 cup shredded Mexican-blend cheese, divided
  • ½ cup sour cream
  • ¼ cup honey
  • ¼ cup lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • 1 can (10 oz.) green enchilada sauce
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish.
  2. In a bowl, combine the canned chicken, sour cream, honey, lime juice, chili powder, garlic powder, cumin, and half of the shredded cheese. Season with salt and pepper.
  3. Spoon the chicken mixture into each tortilla and roll tightly. Place seam-side down in the baking dish.
  4. Pour the green enchilada sauce over the top and sprinkle with the remaining cheese.
  5. Bake for 20–25 minutes, until hot and bubbly.
  6. Serve with your favorite toppings like cilantro, avocado, diced tomatoes, or extra sour cream.
